
When it’s hot in the summer and the thought of turning on your stove makes you ill… I pull out this recipe. Simple and if you’re lucky you can grab the cucumbers off the vine in your garden. I’m not so lucky this year. Cucumbers in the garden are definitely not pulling their weight this year. You can make this recipe ahead and leave them in the fridge to have a side dish or a healthier snack. You may not be able to beat the heat but you can have a cool side dish on a hot summer day.


Creamy Cukes
Ingredients
- 3 cucumbers
- 1/2 cup Onion
- 1/2 cup Milk or enough to cover the top of the cucumbers in the jar
- capful vinegar
- Borsari Original Seasoning (You can use Salt & Pepper to taste for a substitution)
Instructions
- Slice your cucumbers and onions. You can use as many as you like. Just make sure you have enough milk to cover the cucumbers and onions. I like a quarter onion to the cucumber. Then just a capful of vinegar to a splash of vinegar. Place in a container in the refrigerator for a couple of hours. Then add salt and pepper when serving. Refreshing on a cold day and simple.
