
It’s almost the season of Ho Ho Ho and cozying up by the fire. So, I thought I would share the Swedish Pepparkakor Spice Cake recipe. This is a great cake when you want spice but not a lot of sweet. I dusted mine with powdered sugar but a side of homemade whipped cream would be perfect too. Maybe since it is the holidays you can do both (I won’t tell). Celebrate the season with a big cup of coffee and a slice of cake after a long workday. I’m currently counting the minutes to that moment right now.

Swedish Spice Cake
Ingredients
- 1 cup milk
- 1 tsp vinegar
- 2 cups sugar
- 1/2 cup butter
- 3 Egg
- 2 cups flour
- 1 tsp baking soda
- 1 tsp ground cloves
- 4 tsp ground cinnamon
- 1/2 tsp ground ginger
Instructions
- Grease and flour bundt pan. Preheat oven to 350 degrees.
- Separate eggs. Beat the 3 egg whites until fluffy and set aside. Reserve egg yolks for next step.Mix together 1 cup milk and 1 tsp vinegar. Beat in 2 cups sugar 1/2 cup butter, and 3 egg yolks. Sift together 2 cups flour, 1 tsp baking soda, 1 tsp ground cloves, 4 tsp ground cinnamon, 1/2 tsp ground ginger. Slowly beat flour mixture into the batter.Fold in egg whites to the batter.
- Add batter to bundt cake and cook for 1 hour.
- Remove from pan when cool.
