
This dish is simple and uses some fresh ingredients from your garden. If you don’t have the ingredients in your garden make sure you use fresh herbs and some good tomatoes from your local market. If you are rushed for time you can make the dressing ahead of time and just slice the tomatoes when you are ready for a quick and healthy lunch.

Goated Tomato Salad
Nice summer dish which will only get better when we finally get tomatoes from our garden.
Ingredients
- 2 oz Feta Cheese Room Temperature
- 2 tbsp White Wine Vinegar
- 2 tbsp Borsari Olive Oil
- 1 tsp Tarragon
- 3 shakes Borsari Citrus Seasoning
- 2 Large Tomatos Sliced
- 1/4 cup Black Olives Sliced
- 1 tbsp Parsley Chopped
Instructions
- Place Goat Cheese, White Wine Vinegar and Olive Oil in a small food processor until blended. Add Tarragon and Borsari Citrus Seasoning and blend a second more.
- Slice tomatoes and arrange on platter. Drizzle dressing on tomatoes and sprinkle sliced olives and parsley over tomatoes.
