Course: Dessert
Servings: 12 scones

  • 2 cup Flour
  • 1 tsp Baking Soda
  • 2 tsp Cream of Tartar
  • 1/4 cup Sugar
  • 1/4 cup Stevia
  • 1 tbsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 cup Shortening
  • 2/3 cup Milk
  • Cinnamon and Sugar

  • 1 cup Confectioner Sugar
  • 1-1/2 tbsp Milk
  • 1/2 tsp Vanilla Extract
  • 1 tsp Cinnamon

  • Preheat Oven to 425.
Add all the ingredients for the dough in your mixer. Mix all ingredients until incorporated.
Roll out to 1/2" to an 1" thick depending on how big you want your scones. I did a 1/2". Thicker dough will mean probably 6-8 scones.
I used the top of a canning jar to make my scones. Simple and easy.
Place on parchment lined baking sheets. Sprinkle a little cinnamon and sugar on top of them if you like. In the oven it goes for 12 minutes.
  • Whip up the icing in a small mixing bowl and drizzle on the tops. I cut mine in half and placed whipped cream in the middle because well I can and it was yummy!

Icing- I actually used coconut milk, monk fruit, cinnamon and stevia. Now I only did this because I'm trying to be good and keep my sugar lower. So by all means use it if you need to keep that in mind otherwise go all sugar! I will live vicariously through you!
